Cucumber Tomato Bruschetta

Chop & Mix Together:

Tomato

Cucumber (seeded)

Red Onion

Cilantro

Garlic

Green Onions 

Salt & Pepper

Lemon Zest

Then you toast your baguette with a little olive oil .

I made a smear with some cream cheese, a little sour cream and the leftover Diplicous Smoking Tomato Bacon Artisan Dip Mix that you can got online at Diplicous.com.  

They were very tasty and I'm always looking for good things to make from things grown in our garden. Cucumbers usually get made into pickles around here but this was a great way to use them up. These also have just a bit of parm cheese on top.
